.flaxseed falafel.

 here is the recipe! so fast and delicious, and healthy.

flaxseed falafel

ingredients:
1 can of chickpeas (water drained)
1/3 cup flaxseed
1 T. water
3 garlic cloves
1/4 cup parsley
2 tbsp lemon juice
1 t. cumin
1/2 t. salt
1/4 t. coriander (i like to use a little more)

1/4 c. breadcrumbs
1 T. flaxseed
1 large egg
oilve oil
2 whole wheat pitas
diced cucumber/tomato in greek dressing- feta is optional
plain yogurt
mint

okay. this is SO easy.

1. throw first 9 ingredients in blender.

2. shape the mixture into 4 patties. ( i like to flatten them like crescents, so they fit perfectly into the pita-halves)

3. mix the breadcrumbs with the flax seed. dip the falafel patties into egg, and then into breadcrumbs. fry patties in pan with light olive oil until crispy on either side.

4. put falafel in whole wheat pita half, topped with the cucumber tomato salad

5. blend 3/4 cup plain yogurt with 3 sprigs of mint leaves.

dip falafel in mint-yogurt and enjoy!


this recipe seriously takes less than 20 minutes to make. and even shorter time if your loved one chopped the tomatoes and cucumber while you shape your falafel.

  1. also, this only makes enough for 2 people. 1 serving for me, 3 servings for kevin. if you are feeding more than yourself and kevin, then i'd recommend doubling the recipe.
